  • Like all whole grains, Organic Whole Spelt Berries are rich in fiber, B vitamins, and plant protein. Use them as a substitute for rice, even in recipes like risotto. However, unlike most whole grains, spelt wheat berries have a rich nutty flavor. Therefore, they will enhance the taste of any dish and are delicious served as a side on their own.
  • Please remember that Organic Whole Spelt Berries are a type of wheat; therefore, there is gluten.
  • Sprouting Organic Whole Spelt Berries is the same as sprouting any other whole grain. Let them soak, cover, and then rinse and drain in a sprouter.
  • How to Cook Organic Spelt Berries: 1) Make sure to soak Spelt Berries before cooking, overnight soaking will give you the best results, but if you can’t wait that long, leave them soaking for at least an hour. 2) Place the berries and water where the Spelt berries soaked in a pot and bring to a boil. 3) Turn down the heat and let simmer for 1-1 ½ hours. 4) Season with salt near the end and then drain and use the cooked grain as guided by your recipe. 5) When cooking spelt wheat berries, use 2 cups of water per 1 cup of grain for a chewier texture. If you need softer grain, use 3 cups of water per cup of dry spelt berries.

  • 1 lb Green Beans (sub zucchini or eggplant when in season!) (426g)
  • 12 oz Cherry Tomatoes cut in 1/2 (340g)
  • 2 tsp Garlic minced, 1/2 Red onion chopped,
  • 3 Tbs Extra Virgin Olive Oil divided
  • 1/2 tsp Sea Salt, 1/2 tsp Black Pepper

Prep Time 30 minutes | Cook Time 40 minutes | Total Time 1 hour 10 minutes | 4 Servings

INSTRUCTION:

1. Cook the spelt berries

  • 2. Toast the Pine Nuts:
  • Preheat oven to 350F (177C) and toast pine nuts for 6-7 minutes, or until toasty and fragrant. Set aside to cool.
  • 3. Roast the Veggies:
  • Pour olive oil into a large frying pan. Add finely chopped garlic and red onion. To fry.
  • Add mushrooms, green beans, bell pepper, and cherry tomatoes. Salt and pepper. Stew for about 10 minutes. Add to the vegetable spelt berries and mix well.
  • 4. Garnish with lemon juice, pine nuts, and fresh parsley. Serve immediately.
